Great Giveaway: Magic Bullet to Go Blender

Oy vey. How can it have been so long since my last post? So sorry readers. Ispent two weeks in the homeland (California) visiting family (much food-bliss to share with all of you) and between the week getting ready to go and the week back home catching up, (gulp) no posting.

But I have a ruse to get your attention following my over-long absence: a great giveaway for a Magic Bullet Blender. Better still, it is a "to go" model, so you can blend delicious, healthy concoctions near and far (I'm already wondering if TSA will let me blend a smoothie in flight...)

So, here are the directions. Read them carefully, as this is unlike any other giveaway I've done before, the primary differences being that (1) I will not be choosing the winner; the Magic Bullet PR company will choose a winner from those who post comments; (2) You need to become a fan of Magic Bullet on Facebook; and (3) you need to submit a quick and easy snack recipe (not just a general comment) for your comment.

My favorite snack is pesto spread onto artisian bread, topped with fresh mozzarella and fresh basil then toasted . YUM!

Oh man...so many options!! I would say I would make my peanut butter/banana smoothie... Yogurt, frozen banana, peanut butter, soy milk, some cinnamon....mmmm

My favorite snack is ice cream! I try to make it healthier by just processing frozen bananas in my food processer...I'd love to learn how to do other fruits too!

Our favorite snack food to make is our homemade bar that's like the lara bars you buy in the store. Our favorite flavor we make we call blueberry muffin: Dates, dried blueberries and walnuts.

My favorite go-to snack would definitely have to be bruschetta on top of some toasted bread! Tomatoes, balsamic, garlic, BASIL.. what more could you ask for! Yummm!

My favorite snack is kale chips. Fresh kale leaves tossed in a blend of raw cashews, red bell pepper, garam masala, garlic, and pepper. Dehydrated until nice and crispy.

We're following the Specific Carbohydrate Diet to see if it will help with my five year old daughter's ulcerative colitis.

We just traveled to a conference/camp for the weekend and took our old Magic Bullet (I wish I had heard about the To Go option sooner!) and it was great because we were able to make smoothies, pancakes, chicken guacamole and more with it.

Here's one of our favorite snacks right now - which can be adapted for those who are not on the SC Diet.

BANANA PANCAKES

Ingredients:
- 2 Eggs
- 1 Large Banana (or two small bananas)
- Pat of butter
- Cooked/mashed blueberries (optional)

Place two eggs and the banana(s) in the Magic Bullet or a blender (if you don't have the Magic Bullet!).

Blend the items together.

Place pat of butter on a griddle or in a pan.

Pour small amounts of the banana/egg batter onto the griddle or pan. (Smaller pancakes seem to work better - I usually can fit four per pan.)

Cook on medium for a minute or two until one side is golden brown, then flip and repeat. I just pour the batter straight from the Magic Bullet.

Optional topping: While the pancakes are cooking, take a cup or two of blueberries and place into a pot. Put on medium heat. Use a potato masher or other gadget to smash the blueberries. As the blueberries heat up on the stove, use the masher to squash the blueberries. Once the blueberries warm up, the color will turn purple. Continue to mash the blueberries until you get a chunky, jelly-like consistency. Place blueberry topping on pancakes and serve!

We usually have these after school or summer camp because they're fast and easy to make. I usually make enough blueberry sauce to cover 3-4 batches of pancakes.

For those who prefer a sweeter snack, you could add a little sugar or honey, but the pancakes alone are still slightly sweet due to the bananas and blueberries.

Mediterranean Crostini:

1/4 feta cheese
1/2 cup olive oil
1/2 cup Kalamata Olives, pitted and quartered.
1 tsp. Kosher Salt
1 tsp. miced garlic, or garlic powder
1/4 tsp. freshly ground pepper

Mix above ingredients and served with pita bread that has been warmed in the oven.

Dads, grand-dads, and husbands alike all have found this recipe to be delicious!! It's quick, easy, healthy, and sure to please the masses!

In a FLASH Guacamole

1 Avocado, flesh scraped out
2 T Medium Salsa
2 T Chopped Onion
1 T Lemon or Lime Juice
2 Dashes of Hot Sauce
Salt and Pepper to taste


In a bowl, mash the avocado and stir in the rest of the ingredients. Or for an even flashier FLASH, place all of the ingredients in a Magic Bullet Blender (small jar with the whipping blade) and whir together until blended (about 5 seconds).

Serve with your favorite chips, cut veggies, or as a spread on your favorite sandwich.

My favorite snack: Chips n Guacamole!

Easy to make and always a crowd pleaser. I can't imagine how much easier it would be to make if I had a Magic Bullet to Go Blender!

One large avocado works for 2-3 people depending on appetite. (You want Hass avocados!) The amounts below are for each avocado and can be adjusted according to how many you mix in.

1-2 TBS of grated fresh onion or finely diced green onions
1 small tomato
1 tsp or more of finely diced jalapeño (fresh or canned)
1-2 tsp of lime juice (More or less. This adds flavor, keeps from darkening and moistens the guacamole. You don’t want it too runny though. Careful with the amount of tomatoes as they, too, add to the moisture.)
2 tsp diced cilantro
½ tsp salt to taste
Minced garlic to taste (maybe start with a ½ to 1 tsp

Place all ingredients except Avocado into the blender and blend together. Once blended stir into mashed avocado. That's it!

If storing it for an hour or so, put in a seed or two, cover it with plastic wrap, letting the wrap touch the top of the mixture. (This prevents browning as well.)

My favorite snack right now is dehydrated pineapple! Peel, slice fresh pineapple and dehydrate. My dehydrator recommends 105 - 120 degrees for raw foodists. Should leave it to cook overnight. Yum!!

I loooooove smoothies in the morning. Does breakfast count as a snack? Adapted from Everyday Food (bygone PBS show + a great monthly magazine) and Camilla's super-secret power ingredient:

1/2 of a banana (sliced and pre-frozen or fresh, depending on the amount of thickness you prefer in your smoothie. The colder the thicker.)

1/2 cup lowfat yogurt (plain, vanilla, flavored, whatever)

1/2 cup frozen fruit of your fancy

AND . . . Fresh baby spinach (thank you Camilla for the tip; dear readers, see her 2/28/08 post on Sneaky Smoothies)! However much you feel like

PS: Frozen blueberries make your smoothie a beautiful color. Mixed bananas and strawberries turn it green, but it is still delicious.

I love to snack -- cottage cheese with blueberries, yogurt with fresh berries and a dash of cinnamon, peanut butter on a spoon (straight from the jar!).

I've been making a guacamole hummus lately, for veggie-dipping. It's adapted from a Cooking Light recipe.

1/2 cup chickpeas
1/2 an onion (or more, if desired)
3-5 cloves of garlic (I like a lot of garlic)
1/2 an avocado
salt and pepper to taste
fresh lemon or lime juice
2 Roma tomatoes, diced
minced cilantro, if desired

Pulse chickpeas in food processor until coarsely chopped. Add onion and garlic; pulse a few more times. Add avocado; pulse a few more times to desired consistency. Add salt and pepper and juice to taste. Stir in diced tomatoes and cilantro, if desired.

I officially "like" magic bullet on Facebook and would "like" even more in my kitchen!

Since summer veggies are finally here, I like to make quick and easy gazpacho. Fresh from the garden tomatoes and cucumber. Throw in some red onion, green bell pepper, garlic, red wine vinegar, olive oil and salt/pepper to taste.

Pulse blend a few times to soupify and then put it in the fridge to cool. Couldn't be easier or more delicious for a healthy summer snack (or dinner).

My fav snack recipe is:
Healthy blueberry smoothie
1/2 cup frozen blueberries
1/2 banana
1/4 greek yogurt
1 cup organic baby spinach
Blend together till smooth (you can add a little skim milk if you don't want it thick)
Refreshing and healthy!

Black Bean Brownies...say whaaattt??
Yep...a flour-less brownie that has left many in bewilderment ...but sufficiently satiated by the magically deliciousness :)

1 (15-ounce) can no-salt-added black beans, drained and rinsed
3 large eggs
1/3 cup melted butter, more for the baking dish
1/4 cup cocoa powder (if you're willing to spend the extra dough..go for a name brand such as Guittard or Scharffen Berger..will elevate the deliciousness...)
1/8 teaspoon salt
2 teaspoon gluten-free vanilla extract
1/2 cup plus 2 tablespoons cane sugar
1/2 cup gluten-free semi-sweet chocolate chips
1/3 cup finely chopped walnuts
Method

Preheat oven to 350°F.

Put black beans, eggs, melted butter, cocoa powder, salt, vanilla extract and sugar in the bowl of a food processor or BLENDER and process until smooth. Stir in the chocolate chips and/or walnuts. Pour into 8x9 in pan...Bake 30-35 minutes. I usually double the recipe to get thicker brownies..as these can be on the thin side..

And YES..I am a FB fan...

My favorite snack would be freshly made challah with honey butter. I've learned to do a 4 strand braid and a 5 strand thanks to you tube, no attempt on the six strand yet. Of course, challah for breakfast b/f step aerobics is not the best thing for doing air jacks.

Glad your getting rid of the powder blue toilet...my house was built in 1955 but thankfully it came with all-white bathrooms. It also came with some ancient peach trees loaded with fruit (unbeknownst to us when we bought it). It the fruit doesn't all die I'll bring some to class for you! Peach trees are highly sensitive to fungi and other diseases (sadly...)

Okay, so right now I am nibbling on still warm sun rippened strawberries that I just picked but the recipe that I like is actually a salad. It is healthy, sweet, savory and sooo yummy.

Place in bowl enough baby spinish to suit you then top with 6-8 Emerald Glazed Pecans (pecan pie flavored)
1-2 T crumbled blue cheese
Use Balsamic vinergarette dressing and enjoy.
My mouth is watering as I write this. If I don't have time or energy to make this I like to nibble on a couple of figs or dates.

WOW Im a fan on facebook..what a convenient tool! I am a food vendor and this could be of such great use:) We are a Russian American fusion style vendors so the 'magic bullet' could come of handy in so many ways.

We make homemade blintzes/crepes filled with farmers cheeses topped with carious purred fruits Strawberries, blueberries, gooseberries, red & back currents, raspberries, peaches and more MmMm Mm. We also make them filled with ground meat - which would be ideal to grind in the blizzard and fry during events. In addition we make perigees filled with chopped cabbage and diced eggs, ground meat, and various diced dried fruit and nuts. We also make burritios, salads, sandwiches and more.

Our mango chutney quesadillas would could be made in a flash by throwing all the ingredients in the blizzard then fry them up. This recipe makes two large packed quesadillas with some leftover fillings.

4 Large tortillas
1 1/2 onion
1 bell pepper
1 cup corn
1 cup black beans
1 cup sharp cheddar cheese
1 jalapano
1 Mango
1 cup fresh cilantro
1 cup chopped chicken breasts (optional)
4 tbs taco seasoning
1 tbs cumin
Salsa and sour cream for dipping


Clean onion, pepper and mango and drain and wash beans if using from a can. Place 1 onion, peppers, into blizzard blender pulse until chopped finely. Plop into skillet fry over an open fire stirring in 3 tbs of taco seasoning and cumin. While the veggies fry chop the cheese with the blizzard chopper/cheese grater/food processor. Mix the remaining 1 tbs of taco seasoning into the sour cream. Then put the mango, remaining onion and cilantro in in the blizzard chopper - chop semi-finely. Cover one tortilla with grated cheese layer beans, veggie mix, more cheese, mango chutney, corn, chicken if using and another layer of cheese sandwich other tortilla on top then fry over an open fire on high heat on each side for five minutes. Serve with salsa and flavored sour cream and enjoy :).
